Determination of carbohydrates and fructans content in Cyperus esculentus L.

چکیده
The tiger nut contains different active ingredients like oil, tannins, sterols, saponins, alkaloids, vitamins C and E, minerals, resins. There is a lack of information about carbohydrates content Cyperus esculentus L. Thus, the aim this study was to determine herb tubers. qualitative composition quantitative in tubers ( L.) were determined by using GC/MS method. results analysis showed that have free carbohydrates, namely D-saccharose, D-glucose, D-Mannitol, D-fructose, while only disaccharide D-saccharose. Free D-saccharose presented raw materials greatest amount, 63.72 mg/g, – 9.79 respectively. Monosaccharides their derivatives after hydrolysis D-xylose, D-galactose, D-arabinose tubers, D-arabinose, D-Dulcitol, D-mannose nut. D-glucose dominates D-xylose herb, 177.26 mg/g 39.07 total fructans spectrophotometric Its 13.49% 8.78%
